One of Denver’s Last “Real” Restaurants!

Do you remember when dining out was exciting? When you went to a restaurant not only for the food, but for the service, ambiance, and the overall experience? Well, now that “experience” is once again alive and well in Greenwood Village.

In 2003, Robert Sansone, Executive Chef of Sansone’s Bistro, purchased the once great Chez Walter Restaurant located at 5969 S. University Blvd. on the southwest corner of Orchard Rd and University. Since then, the restaurant has been transformed into a cozy hideaway boasting an eclectic menu selection of Denver’s best continental European cuisine. At Sansone’s Bistro, not only has handcrafted cuisine returned, but, Robert and his wife, Erica, insist that service also be returned to a higher standard.

Growing up in Rochester, New York, Robert’s first cooking memories are in the kitchen with his Grandmother, “We were making gnocchi and both of us were covered from head to toe in flour”. His passion for great food inspired him to earn his culinary degree at Johnson & Wales University in Providence, Rhode Island. A culinary apprenticeship at the Brown Palace Hotel landed Sansone in Denver, the city he now calls home. Over the years Sansone’s career diversified into many directions: As a chef, his award winning recipes can still be found at Denver’s Pisco’s restaurant, as a teacher, he shared his knowledge with the students of Emily Griffith Opportunity School, and as an entrepreneur, Sansone has been a personal chef, operating a home bistro service.

Upon purchasing the restaurant, Robert didn’t want to alienate the current clientele with rapid and sweeping changes. The first changes were as subtle as new paint creating a cleaner, brighter, and more modern atmosphere. A local artist was commissioned to paint a mural of the Tuscan countryside behind the bar, and create a weathered European appearance for the storefront. The work of local artists, an antique camera collection, chef figurines, and Robert’s personal beer stein collection adorn the walls creating a real European feel as soon as you enter the front door.

Chef Robert quickly went to work creating a mouthwatering, eclectic, continental European cuisine menu that has something for everyone. He even has a kid’s menu which has been said to have “the best macaroni and cheese EVER!” .

For starters, Sansone’s Bistro showcases items like his home town favorite, Artichokes French - sautéed, egg battered artichoke hearts finished with dry sherry, lemon, and a touch of cream. Calamari lovers must try Sansone’s Calamari Portuguese - fresh calamari tossed with mint, banana peppers and olive oil.

Entrée selections include Weiner schnitzel and liver and onions, a scrumptious Spanish Paella de Mar - jumbo shrimp, salmon and New Zealand green lip mussels steamed with saffron rice, a traditional Italian Veal Picatta - capers, broccoli, white wine, lemon and butter, Crispy Duck served with poached pears and a white wine pear demiglaze, or Cedar Planked Grouper -fresh grouper fillet char broiled on a cedar plank, infusing a subtle smoke flavor, and drizzled with a nutty brown butter. All entrees include a choice of homemade soup or salad, and each night Chef Sansone creates at least three truly unique specials. Other changes such as offering smaller portion sizes, monthly wine dinners, a worldly and reasonably priced wine list, early dinner specials, and foods to go, including all-inclusive picnic baskets and catering, have been spurred by customer requests.

The combination of Chef Robert’s natural “talent” for food and his devotion to becoming South East Denver’s favorite neighborhood dining spot has his customers raving.
